Ingredients –

Cake:

  • 250g unsalted butter
  • 250g caster sugar
  • Large pinch of salt
  • Zest of 2 lemons
  • 4 large eggs
  • 150g self-raising flour
  • 100g ground almonds
  • ½ tsp baking powder
  • Juice of 1.5 lemons

Drizzle:

  • 25g Caster sugar
  • Juice of half a lemon

Icing:

  • 250g mascarpone
  • 100g double cream
  • 50g lemon curd
  • Juice of half a lemon
  • zest of 1 lemon
  • 100g icing sugar
  • Yellow food colouring – of course!

Method:

  • Preheat the oven to 175C
  • Grease and / or line 2 x 8 inch tins
  • Cream the butter, sugar and salt together for a couple of minutes until light and fluffy
  • Add the zest and then the eggs one at a time
  • Sieve in the flour and baking powder. Add the ground almonds. Fold it all together with a spatula or large metal spoon
  • Split mixture between the two tins and bake for about 25 minutes or until a knife comes out clean
  • Meanwhile prepare the drizzle. Mix the 25g of caster sugar with the juice of half a lemon
  • As soon as the cakes are done, spike all over with a skewer or toothpick and then sprinkle the drizzle all over the cakes
  • Allow to cool in the tins
  • Beat together all the icing ingredients. Split the icing between the two layers – get creative with a piping bag if you have one!
